I think there’s a fair argument to be made here that you should be able to have a Loxodon with high enough strength to move a Reduced physical cannon and also create two magical cannons simultaneously with 15 levels of Artillerist Artificer. For the record, I don’t think anything is explicitly mentioned about the effects of an enlarge/reduce spell on the magical cannons. The ballista cannon gives a range of 120’ with up to 5’ of knock back on hit and deals 3d8 force damage. If you can manage to grab 15 levels of Artillerist Artificer then you get to create two small or tiny magical cannons simultaneously, both of which can be activated by a single bonus action. Battlemaster fighter gives Precision Attack and Action Surge to act faster and hit more precisely.Repeater Shot infusion from Artificer seems fitting but only works on weapons, not objects.Using Find Steed or Find Greater Steed so that the mount actually carries the cannon in combat and drags it out of combat : it can use it's action to aim by moving its body into position (with an intelligence of 6 and the bond you share, it seems reasonable).That is acceptable at level 7, but does not scale well. We can try to hit only once per turn for 8D10 - 1D4 (reduce) + 2D6 (Sneak attack) : about 50 damage.We need a bag of holding to actually carry to canon from place to place, then use our reduce on it in the bag to remove it : a bit of a setup time. It might be enough in the early game, but soon we wont hit anything so we need a way to get advantage on a ranged weapon attack that is not from an actual ranged weapon. We can dump dexterity but at high level, it just wont be enough to actually hit. 4 levels in Chronurgy wizard allow us to reroll our attacks if needed and act a bit faster. I imagine a literal powder monkey jumping on our shoulder. Find Familiar is a solution : it can aim or load for us. Which means we only need the next action. But as a Thief Rogue, we can use our bonus action to aim or load (and use our trunk if our hands are taken). We do need to concentrate on a spell and doing three actions seems like a lot. So we need to have powerful build and use enlarge/reduce, reducing its weight to an 1/8th and have powerful build from a race like Loxodon : 15 Strength becomes enough to wield it !
